Create a custom large-format commercial oven where a fully assembled unit cannot fit or where the surrounding façade needs to match the restaurant. The Modena2G OK arrives as a modular refractory oven core; the stand, enclosure, final finish, and ventilation are planned and built on site.

  • Four production capacities: Select the 120, 140, 160, or 180 size according to throughput and available floor space.
  • Doorway-friendly components: Individual core pieces are designed to be carried through standard access routes and assembled in place.
  • Commercial construction: Includes a 4-inch refractory dome, 2.5-inch NSF-4 floor, side/top dome insulation, 4-inch floor insulation, high-temperature mortar, and an insulated door with thermometer.
  • Indoor gas variants: The -G SKUs add the self-modulating commercial burner for indoor installations, with gas-only or permitted gas/wood operation; confirm NG or LP fuel and controls.
  • Finish freedom: Build an approved noncombustible exterior in brick, stone, tile, stucco, or metal around the installed core.
  • 120: 48 × 56 in. floor; about 80-minute heat-up; 6–7 10-inch pizzas
  • 140: 56 × 60 in. floor; about 90-minute heat-up; 10 10-inch pizzas
  • 160: 56 × 68 in. floor; about 100-minute heat-up; 12 10-inch pizzas
  • 180: 56 × 76 in. floor; about 110-minute heat-up; 14 10-inch pizzas

A structural stand or hearth, enclosure and façade, decorative arch, ventilation system or Type 1 hood, tools, installation labor, and permitting are separate unless specifically added to the order.
